  12. Take 1/2-1 tsp Red Chilli Flakes
  13. Get 1 tsp fresh milk: boiled & RT
  14. Take 2 tbsps Garnish: Grated Cheese
  15. Prepare 3-4 Sautéd Cherry Tomatoes
  16. Get 1-2 tbsps Sweetcorn Kernels
  17. Take 4-5 Blanched Whole Spinach Leaves: For the Spread- Optional
  18. Prepare 1/8 Cup Olive Oil: For Cooking, entirely
Instructions to make Spinach Cheese Omelette:
  1. Heat up a frying pan with some oil: Add in the chopped garlic, onions & green chillies- Sauté, until a bit translucent
  2. The Spinach Leaves should be well washed & pat dried much beforehand- Not much water should be there at all…
  3. Once the sautéed veggies are translucent- add in the Spinach Leaves- Reduce the flame to low & sauté until 70-75% cooked
  4. Add in the salt & black peppers to it & sauté until it reduces in its volume quite a bit & sprinkle some red chilli flakes & the mixed herbs in it & mix well nicely & turn off the flame
  5. In a separate bowl: Add in the eggs & also add in some salt & peppers to it & whisk well- Add in the milk to it- this makes the omelette fluffy enough
  6. Now, take the same or a separate frying pan & heat up over the medium flame: Add in the rest of the oil to it- Pour in the Egg mixture, evenly on it
  7. Keep the flame on the low at this point & all through & gently flip it on its other side…Flip it over again & now, turn off the flame
  8. Now, add in the sautéed spinach-corn mixture to it, spread it evenly all along the surface of the omelette & grate the cheese portions to it & spread again with your hands if accumulating at one side more…
  9. Be generous with the cheesy part (since that’s the appealing part to this recipe)…allow it to melt just a bit & then simply give the omelette one or single layered fold & very gently & carefully dish out onto the serving plate/platter
