Instructions to make Cheesy chutney omelette:
- Firstly for preparing chutney, heat oil in a kadhai. Into this add green chillies, curry leaves, garlic, peanuts and onions. Fry this until the onions turn lightly brown.
- Once onions are done add the tomatoes along with salt as per taste and let them cook well.
- Once the tomatoes are half done add turmeric powder and chilli powder. Cook this for 5 more minutes and its done.
- Let it cool a bit then grind it and keep aside for later use.
- Now to prepare omelette, firstly whisk the eggs very well.
- Then add the chopped onions, green chillies, tomatoes and salt as per taste into it. Whisk this again very well.
- Heat the pan for making the omelette.
- Pour the egg mix on the pan and let it cook on low flame.
- Once its 3/4th done carefully flip it and let it cook.
- After cooking for about 30 seconds again flip it.
- Spread the earlier prepared chutney on the omelette.
- Now sprinkle the mozzarella cheese then top with coriander leaves and herbs.
- Cover and cook the omelette for about 2 minutes or until the cheese melts.
- After cooking for 2 minutes its ready. Cut it into desired shape and serve it hot with sliced onions.
