Steps to make Cheesy bhaji Omellete:
- For the bhaji, heat oil in a pan, add chopped onion, fry it for 2-3 mins, add chopped carrots, green chillies and fry it for another 3-4 mins.
- Next add the chopped capsicum and fry it well for another 2-3 mins, add the chopped tomatoes and cook it until it becomes soft and mushy.
- Next lower the flame, add salt, red chilli powder & pav bhaji masala, add little water and fry the masala well for about 3-4 mins, next add tomato ketchup and again fry it for 2 mins, add little water if required.
- Add some chopped coriander leaves, lemon juice, give everything a nice mix and switch off the flame. Keep the bhaji masala aside.
- Crack 3 eggs in a bowl, add little salt & black pepper, add 1 tsp of water and whisk it well.
- Next heat butter in a non-stick pan, add the egg mixture and allow it set, keep the flame medium, now add the bhaji masala on half side of the eggs, add some grated cheese
- Gently fold one side of the omellete, cover and cook on a low flame for 2-3 mins and it's ready. Serve it hot with some bread slices.
