- Prepare 1 tablespoon Ginger and garlic paste
Instructions to make Chicken Akhni (Pilau):
- Heat oil in a pot, add a heaped tablespoon of butter or Margarine,to this add cumin seeds, Bay leaves
- Allow onions to fry until golden brown
- Add 1 tablespoon Ginger and garlic paste to the fried onions
- Lower the heat
- Add in salt, chillie powder, Turmeric, cumin and coriander powder
- Add in grated or blended tomatoes
- Add chicken or lamb pieces to the pot
- Add half a cup of water and allow meat to soften and gravy to thicken
- Set aside
- Rince the rice in warm water, add about 4 cups boiling water, now throw in the cinnamon sticks, 4 teaspoons salt and star anise, boil rice until half cooked
- Drain the rice using a collender
- Fry mixed vegetables in butter until soft and add it to the rice,mix well
- Fry potatoes and add the chicken and gravy
- In a separate pot,oven safe or a casserole dish layer half rice at the bottom, pour chicken gravy and potatoes over the rice, add boiled eggs, top with remaining rice
- Pour a cup of water over the rice
- Cover and allow to steam in the oven for 30 minutes at 180° Celcius
- Garnish with fresh coriander
- Serve with salads or raita
