  4. Switch to the dough hook, and add the active yeast mixture. Start adding the dry ingredients, about a quarter-cup at a time, with the mixer on a low speed. Keep kneading until the dough is smooth and springy. (It may take a little longer than "normal" bread.)
  5. Turn out of the bowl. Clean and lightly oil the bowl and then put the dough back in, cover and leave in a warm spot to rise for an hour.
  6. Knock back the dough. Shape it into a loaf and place it into a lightly-oiled loaf tin. Leave to rise for another 30 minutes.
  7. Preheat the oven to 200C and bake for 30-35 minutes.
