The ingredients needed to make Butternut soup:
- Get 1 kg butternut
- Take 3 garlic cloves( grated
- Make ready 1 medium grated onions
- Take 1 bunch corriander
- Prepare 2 medium-sized grated carrots
- Get 1 medium-sized chopped green capsicum
- Make ready 1 tbsp mixed spices
- Prepare Pinch salt
- Make ready 3 tbsp liquid oil
- Take 2 medium-sized tomatoes
- Prepare 1 tbsp royco
- Take 1/2 litre chicken broth water
Steps to make Butternut soup:
- Take butternut wash and divide into small pieces. Then boil with a pinch of salt.
- Cut the vegetables.
- In a heated put cooking oil, add garlic and let it sautee for one minute. Add in onions and fry for one more minute.
- Add in grated carrot and cook for 3 minutes(2 minutes)
- Add in capsicum and cook for a minute.
- Add coriander cook for a minutes. Then add tomatoes and cook for two minutes.
- Add butternut and stir together with all the content in the pan for 2 minutes. Then add mixed spices together with royco and mix for a a few minutes.
- Add chicken broth mix then allow to boil for 5 minutes to enable the chicken broth to spread evenly.
- Transfer the mixture to the blender and blend until smooth
- Serve.
