- Heat oil in a kadhai. Add dry chillies and ponch phoran. Allow phoran to splutter.
1. Add chopped garlic and slit green chillier. Saute for 1 minute. - Add chopped onion then. Mix salt and turmeric powder and saute till onions and transparent.
- Add chopped eggplant and tomatoes. Mix well. Cover and cook till brinjal get cooked on low heat.
